VEGAN CHOCOLATE PEANUT BUTTER PANCAKES


OH WOW. I repeat. OH WOW. If you like pancakes. If you like peanut butter. IF you like chocolate (what a stupid statement of course you like chocolate). Then Christmas came early for you my friend. Lately i have been loving chocolate peanut butter oatmeal from my www.veganaesthetics.co.uk meal plan however today i fancied pancakes. A big old stack of them to be exact.

INGREDIENTS:

1 and 1/4 cups of flour (i used oat flour)

1 tsp baking powder

1 and 1/4 cups almond milk

1/2 rip banana

2 tbsp chocolate chips

TOPPINGS:

Raw cacao nibs (shop here using code STEFUK OR STEFUS)

1 tsp Raw cacao powder (shop here using code STEFUK OR STEFUS)

2 tbsp maple syrup

1 serving betterbodyfoods powdered peanut butter made extra runny and saucy

1 tbsp peanut butter for topping

METHOD:

  1. Blend together your pancake ingredients and let sit for 5 minutes to thicken
  2. add to pre heated pan and cook until golden on the outside and able to flip
  3. mix together cacao powder and maple syrup to make chocolate sauce (this will be dry and take a while to mix but gets there eventually)
  4. layer pancake, peanut butter sauce, pancake, chocolate sauce, pancakes peanut butter sauce etc until all used
  5. Top with peanut butter, cacao nibs or chocolate chips and add more syrup
