3 VEGAN CHRISTMAS DESSERTS


CHRISTMAS IS AROUND THE CORNER! I cannot believe I just typed that BUT it does mean all the amazing Christmas food is about to be in our bellies which I am very excited about. As part of my VLOGMAS series known as Stefmas on youtube, I bring you 3 vegan dessert ideas you need to take to your Christmas party!

  1. CHOCOLATE FUDGE BROWNIES

  • 1 1/2 cups black beans (1 can, drained and rinsed very well) (250g after draining)
  • 2 tbsp cocoa powder
  • 1/2 cup quick oats
  • 1/4 tsp salt
  • 1/3 cup pure maple syrup,or agave
  • 2 tbsp sugar (or omit and increase maple syrup to 1/2 cup)
  • 1/4 cup coconut  oil
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • Chocolate – do not omit

METHOD:

  1. Blend or food process all ingredients together until combined well except from chocolate
  2. Mix in chocolate chunks and spread evenly in oven proof pan
  3. Bake for 15-18 minutes at 180 degrees fan
  4. Remove and cool for 10 minutes before slicing
  5. Top with crushed oreos, marshmallows or extra chocolate if you like

2. CINNAMON SUGAR COOKIES

 

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoons ground chia or ground flax
  • 3 tablespoons water
  • 3/4 cup vegan butter
  • 3/4 cups white sugar
  • 2 teaspoon vanilla extract
METHOD:
  1. In a large bowl mix together all the dry ingredients.

  2. In a small bowl, mix together the flax or chia, and the water and set aside to thicken which will be almost instant if using chia, but take about 10 minutes if using flax.

  3. In a third bowl mix the vegan butter and sugar together until creamy, about 3 minutes. Add the remaining wet ingredients including the flax or chia mixture, and mix well. Add the wet mixture into dry and combine until a dough is formed.

    4. Spread on a flat surface and roll out with rolling pin. Combine some coconut sugar and cinnamon and cover the dough. Cut out shapes and place on a baking sheet

    5. Bake for 8-12 minutes at 180 degrees fan

6.  Mix together some powdered sugar and water to create a thick icing and drizzle over cookies

3. CHOCOLATE CAKE

  • 1 cup non dairy milk
  • 1 teaspoon vinegar
  • 1 cup all purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup packed coconut sugar
  • 1/2 cup mashed banana

METHOD :

Mix together wet then dry ingredients then combine
Bake for 30 minutes at 180 degrees or until knife comes out dry

ICING:
¾ cup raw cacoa powder
¼ cup melted coconut oil
¼ cup to ½ cup pure maple syrup

METHOD
Mix until combined
