Hey hey sexy! I know why you are here, 20g protein smoothie with NO PROTEIN POWDER?! You must be dreaming, i a mean, where DO vegans get their protein?! RIGHT? Wrong haha! For whatever bizzare reason the whole world is concerned with vegans getting enough protein, maybe they should be more concerned with how to lower their cholesterol! Anyways i was in the mood for something fresh and green for breakfast but also needed a protein kick but did not want cacao …I know right what is wrong with me! SO i started messing around with different foods and boom we have it.

INGREDIENTS:

~5 large bananas

~ 1 cup coconut water

~ 250 grams frozen mango

~ 1tbsp chia seeds

~1 tbsp. almond butter

~ 100g spinach

Pasta pasta pasta! Can anything really beat a huge big carbilicious bowl of warm tomato pasta?! I have always been a pasta lover ever since i was a kid however i always used the same old boring supermarket jar of tomato based sauce. Now i have perfected my favourite pasta sauce recipe which you can do two ways; sweet or spicy! It is so simple and can be made in bulk and kept in the fridge to add to a variety of dishes not just pasta!

INGREDIENTS:

– 400g tin of chopped tomatoes

– 1 clove garlic chopped

– 1/2 red or white onion chopped

– 1 tbsp. mixed herbs

– 1 tbsp. rosemary

– 1 heaped tbsp. smoked paprika

– 2 tbsp. tomato paste

FOR SWEET ADD 1/4 cup coconut sugar

FOR SPICY ADD 1/4 cup jalapenos

METHOD

1. add chopped onion and garlic to a heated saucepan and fry until golden

2. add in spices and tomato paste and stir until the garlic and onion are coated

3. add in your chopped tomatoes and either sugar or jalapenos

4. bring to the boil then simmer for 20-40 minutes (the longer the better!)

5. pour over pasta, vegetables, beans, use as a dipping sauce, add to fajitas!

Jamie Oliver has the most amazing vegan burger recipe ever! I have made these burgers loads of times now and they are so easy to make and taste amazing every time! However i made a few slight adjustments to the measurements as i needed more flavour than he was offering so here is my slightly played around with version:

INGREDIENTS:

400g tin of chickpeas in water, drained

350g tin of sweetcorn in water, drained

4 heaped tablespoons of plain flour

1 tablespoon paprika

1 tablespoon cumin

1 bunch coriander leaves

Zest of one lemon

Jalapenos to taste

METHOD:

Add ingredients to a blender or a food processor until just combined

Divide the mixture into 4 patties

Dust and coat in extra plain flour

Place in a pre-heated (180 degrees) oven for 20 minutes

Flip the burgers half way

Place in a roll, pita, burger bun or wrap along with salad and salsa

ENJOY!

Smoothies are my favourite way to start the day but sometimes i like to spice them up a little, so pour them in a bowl and throw some goodies on top! I also added a little twist this time and added in some Alpro yogurt for extra creaminess and flavour and boy it was good! Yogurt has never really been my thing and since going vegan 2.5 years ago it has never been something i have missed or craved however when i my mum brought this home from Tesco the other day i just had to try…why not. I am so glad i did its perfect, its better than dairy yogurt, its fruity, its creamy its perfectly sweet and just gives my smoothie bowls that extra touch.

INGREDIENTS:

~ 2 ripe spotty bananas peeled

~ 100g frozen mixed berries

~ 100g alpro strawberry and rhubarb yogurt

~ 1 tbsp. desiccated coconut

~ 1/2 berry burst trek bar

~ handful of chopped strawberries

METHOD:

1. Blend the banana, berries and yogurt until smooth

2. Pour out the mixture into a bowl

3. Chop the trek bar and place on smoothie along with strawberries and coconut

4. Stuff in your face and thank me later

Ah Sunday, i think i like you even more than Saturday?! There is just something about Sunday’s that are so much more relaxing and calm, such a peaceful and happy day! Today i experimented with vegan waffles as Marco bought me a waffle maker for my birthday last week! I hit the nail on the head the first time making these …. that never happens believe me!! Fluffy yet crisp vanilla waffles topped with bananas, strawberries and syrup … can i get a hell yeah!

INGREDIENTS:

– 100 grams flour of choice (i used plain white flour)

– 1 teaspoon baking powder

– 1 banana

– teaspoon vanilla extract

– 100 ml. almond milk or other non-dairy milk

– 1 banana for topping, fresh chopped strawberries and syrup

METHOD:

1. Simply blend the ingredients together and let the mixture sit for 5 minutes to thicken

2. In the meantime turn on your waffle maker to let it heat up, i used the non-stick VonShef beligian waffle maker .. click here to check it out on amazon, £21 what a bargain!

3. Pour your mixture evenly across the machine and close over, leaving 3-5 for cooking time or until golden brown!

4. build your tower of 4 waffles and add your toppings!

Hey lovelies, happy Saturday! I want to share with you today a new food product i came across and fell in love with .. so much so i am sprinkling crumbs all over my keyboard as i try type and stuff my face simultaneously! Fit foodie on instagram  has created a brand of fit mixes, a range of vegan protein balls in awesome flavours! I tried the cookie dough version because eh hello cookie dough?! Can i just say OMG … Tastes like Ben n Jerry’s cookie dough, uh just so so good! Therefore i just had to make banana ice cream and veganise cookie dough ice cream in a healthy way! Fit foodie protein balls

INGREDIENTS:

– 5 frozen bananas

– 2 tbsp. raw cacao powder

– fit mixes cookie dough balls

METHOD:

– Blend together the frozen bananas and raw cacao to make smooth banana ice cream
