I must must must share this brand with you. Oh hi, happy Monday! I have just finished guzzling a chocolate mylk by rebel kitchen … a dairy free and vegan friendly coconut mylk brand. I was fortunate to have a few flavours to try ranging from banana mylk, chocolate mylk, green matcha and chocolate orange. WOW. Maybe it’s because I am a self confessed chocoholic but the chocolate and chocolate orange flavours have won me over! I am now addicted. I have purchased other dairy free chocolate milks before but none have come close to this, not to mention other brands have funky ingredients and are loaded with … stuff. Rebel Kitchen mylks are not only dairy free they are wheat, gluten, refined sugar and nut free too! What is even better is the tiny ingredients list which consists of coconut milk, water and date nectar and then a few natural flavours! SO you really do not have an excuse not to try. The cartons are perfect single serve size (otherwise you would drown yourself in the mylk it seriously is that good!) so you can take them on the go with you, pack them into kids lunch boxes, add to smoothies, cereal, oats and more! There is literally no excuse not to run to your nearest Tesco, Waitrose or Wholefoods and stock up your fridge!

Today was my first university exam at honours level and omg university is hard! So i thought i would treat my tummy and my taste buds with a stack of vegan pancakes topped with fresh fruit and chocolate sauce!

INGREDIENTS:

~ 1 1/4 cup flour (i used oat flour – oats blended in my vitamix)

~ 2 tbsp coconut sugar

~ 1/2 tbsp. baking powder

~ 1 tsp vanilla extract

~ 1 1/4 cup plant based milk

~ 1/2 banana

Chocolate sauce

~ 1 tbsp cacao powder

~ 2 tbsp rice malt or maple syrup

METHOD:

1. Blend together or mix together all of the ingredients until smooth

2. Let sit for 5 minutes to thicken or else you will have skinny runny pancakes

3. heat on a pan for 2 minutes either side

4. whilst cooking make your chocolate sauce by mixing 1 tbsp raw cacao powder with 2 tbsp rice malt or maple syrup

5.  top with fresh fruit and chocolate sauce

Tasty, refreshing, frozen grape slush … in just 3 ingredients

INGREDIENTS:

4 apples

1 lemon

1 pack of frozen grapes (500 grams)

METHOD:

1. Run the apples and lemon through a juicer and mix well

2. Add the juice and the frozen grapes to a high speed blender

3. Blend the ingredients together until well combined
