Ah Sunday, i think i like you even more than Saturday?! There is just something about Sunday’s that are so much more relaxing and calm, such a peaceful and happy day! Today i experimented with vegan waffles as Marco bought me a waffle maker for my birthday last week! I hit the nail on the head the first time making these …. that never happens believe me!! Fluffy yet crisp vanilla waffles topped with bananas, strawberries and syrup … can i get a hell yeah!

– 100 grams flour of choice (i used plain white flour)

– 1 teaspoon baking powder

– 1 banana

– teaspoon vanilla extract

– 100 ml. almond milk or other non-dairy milk

– 1 banana for topping, fresh chopped strawberries and syrup


1. Simply blend the ingredients together and let the mixture sit for 5 minutes to thicken

2. In the meantime turn on your waffle maker to let it heat up, i used the non-stick VonShef beligian waffle maker .. click here to check it out on amazon, £21 what a bargain!

3. Pour your mixture evenly across the machine and close over, leaving 3-5 for cooking time or until golden brown!

4. build your tower of 4 waffles and add your toppings!

Yesterday was my boyfriend Marco’s first ever men’s physique competition at the UKBFF and he done so so well! Naturally after a 15 week prep he wanted something delicious for breakfast, something sweet, chocolaty but not too naughty. Well i came up with just the thing. “Reese’s cup style vegan pancakes!” and its safe to say he was pleased!

~ 1 1/4 cup of oat flour

~ 1 tsp. baking powder

~ 2 tbsp. sugar

~ 1/2 banana

~ 1 1/4 cups of almond milk or water

~ 1 tbsp peanut butter melted

~ 2 tbsp. vegan chocolate chips

~ 2 tbsp. rice malt syrup + 1 tbsp. raw cacao


1. Blend together the oats, baking powder, sugar until combined

2. add in the banan and liquid and blend until well combined

3. stir in chocolate chips

4. heat a non-stick pan on a low to medium heat

5. pour out your pancake mix making lots of yumminess

6. melt the peanut butter and spread on cooked pancakes

7. mix together the syrup and cacao to make a chocolate sauce

8. stack your peanut coated pancakes and drizzle with chocolate sauce and extra sugar!

Today was my first university exam at honours level and omg university is hard! So i thought i would treat my tummy and my taste buds with a stack of vegan pancakes topped with fresh fruit and chocolate sauce!



~ 1 1/4 cup flour (i used oat flour – oats blended in my vitamix)

~ 2 tbsp coconut sugar

~ 1/2 tbsp. baking powder

~ 1 tsp vanilla extract

~ 1 1/4 cup plant based milk

~ 1/2 banana

Chocolate sauce

~ 1 tbsp cacao powder

~ 2 tbsp rice malt or maple syrup


1. Blend together or mix together all of the ingredients until smooth

2. Let sit for 5 minutes to thicken or else you will have skinny runny pancakes

3. heat on a pan for 2 minutes either side

4. whilst cooking make your chocolate sauce by mixing 1 tbsp raw cacao powder with 2 tbsp rice malt or maple syrup

5.  top with fresh fruit and chocolate sauce
