Pancake stack


Today was my first university exam at honours level and omg university is hard! So i thought i would treat my tummy and my taste buds with a stack of vegan pancakes topped with fresh fruit and chocolate sauce!

INGREDIENTS:

~ 1 1/4 cup flour (i used oat flour – oats blended in my vitamix)

~ 2 tbsp coconut sugar

~ 1/2 tbsp. baking powder

~ 1 tsp vanilla extract

~ 1 1/4 cup plant based milk

~ 1/2 banana

Chocolate sauce

~ 1 tbsp cacao powder

~ 2 tbsp rice malt or maple syrup

METHOD:

1. Blend together or mix together all of the ingredients until smooth

2. Let sit for 5 minutes to thicken or else you will have skinny runny pancakes

3. heat on a pan for 2 minutes either side

4. whilst cooking make your chocolate sauce by mixing 1 tbsp raw cacao powder with 2 tbsp rice malt or maple syrup

5.  top with fresh fruit and chocolate sauce
